4 sheets lavash bread
2 tablespoons tomato paste
1 (4 ounce) package thinly sliced salami
12 cherry tomatoes, quartered
1 small red onion, diced
⅓ cup sliced black olives
1 ¾ cups shredded mozzarella cheese

Directions

  1. Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line 2 baking sheets with aluminum foil.

  2. Place 2 sheets of lavash on each baking sheet. Spread 1 1/2 teaspoon tomato paste over each sheet of lavash. Lay about 6 slices of salami over the tomato paste. Scatter cherry tomatoes, red onion, and black olives on top. Cover with mozzarella cheese.

  3. Broil lavash in batches in the preheated oven until cheese is melted, 3 to 5 minutes.

Recipe Note

This is a great light meal or snack that can be made with minimum effort. You can also use flat pita bread or focaccias to make other types of delicious pizzas with just a little imagination. Serve with garlic yogurt and a Mediterranean salad.
