Ingredients

1 green bell pepper
1 red bell pepper
1 onion, cut into quarters
3 stalks celery
2 large carrots
1 jalapeno pepper, or more to taste
2 cloves garlic, or more to taste
1 tomato, halved
1 tablespoon seasoned salt (such as LAWRY'S®)
ground black pepper to taste
cooking spray

Directions

  1. Chop green bell pepper, red bell pepper, onion, celery, carrots, jalapeno pepper, and garlic, each separately, in a food processor, combine in a large bowl. Chop tomato in the food processor, drain extra liquid, and transfer chopped tomato to vegetable mixture.

  2. Mix seasoned salt and black pepper into vegetable mixture until evenly coated.

  3. Spray ice cube trays or miniature muffin cups with cooking spray, fill each section with vegetable mixture using an ice cream scoop or large spoon.

  4. Place trays in the freezer until vegetable mixtures are completely frozen, at least 3 hours.

Recipe Note

These are wonderful to have on hand to add to soups, roasts, veggie dishes--anything you want to add a little flavor to. When completely frozen, pop 2 to 3 pods into a snack-sized resealable plastic bag, label, date, and return to the freezer. Do this until all are bagged. Thaw and stir a pod into the eggs to get veggies into you kids! Drop frozen ones into the pot to thaw as the meat cooks.
