Place dates and mango in a blender or food processor, pulse until very finely chopped. Add Emergen-C® Protein Fuel & Super Foods Pomegranate Mango, pulse to combine.
Add cashew butter and salt, pulse until well-combined and almost smooth.
Using your hands, roll 1 tablespoon of mixture into a ball, then roll ball in chopped cashews to coat. Repeat with remaining date mixture and cashews.
