½ cup coconut sugar
½ cup lemon juice

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.

  2. Mix oat flour, agave, coconut oil, and salt for crust together in a bowl. Press into the prepared pan.

  3. Bake in the preheated oven until golden brown, 10 to 12 minutes.

  4. While the crust is baking, combine coconut sugar, lemon juice, oat flour, eggs, egg yolk, and lemon zest for filling until well combined.

  5. Remove crust from the oven and pour filling on top. Return to the oven and bake until set, 15 to 20 minutes longer.

  6. Remove from the oven and cool on a wire rack, about 30 minutes. Cut into 16 bars.
