Place pork into the bottom of a slow cooker and sprinkle with sea salt, seasoned salt, and pepper. Add carrots to the cooker around the roast followed by celery, bell peppers, and onion.
Combine oil, vinegar, oregano, honey, garlic powder, onion powder, thyme, basil, parsley, mustard, and celery seed in a small bowl using a whisk. Pour dressing over roast and vegetables.
Cover and cook until meat is no longer pink in the center and vegetables are moist and tender, 6 to 7 hours.
