1 envelope onion soup mix
½ cup seasoned bread crumbs
2 tablespoons chopped fresh parsley
1 ½ pounds lean ground beef
1 (16 ounce) can whole berry cranberry sauce
¾ cup ketchup
½ cup beef broth
3 tablespoons brown sugar
3 tablespoons finely chopped onion
2 teaspoons cider vinegar

Directions

  1. Combine eggs, soup mix, bread crumbs, and parsley in a large bowl. Crumble beef over mixture and mix well, shape into 1-inch balls.

  2. Place 12 to 14 balls on a microwave-safe plate, cover with waxed paper. Heat in microwave on high until no longer pink, 3 to 4 minutes, remove to paper towels to drain. Repeat with remaining meatballs.

  3. Combine cranberry sauce, ketchup, beef broth, brown sugar, onion, and vinegar in a microwave-safe dish. Cover with waxed paper and heat in microwave on high until heated through, 3 to 4 minutes. Serve sauce with meatballs.
